This is a simple recipe that’s quick and easy to prepare, delicious, filling and healthy! You could make it a lot fancier, but I chose to keep it simple, especially on a night I’m home alone with the dogs… why complicate my ‘me time’?
Ingredients:
2/3 cup wild and whole grain brown rice blend
1/2 Tbsp coconut oil & seasoning for the rice
1 red, orange or yellow bell pepper
1/4 cup sweet red onion
1/3 of a fresh jalapeno (more or less depending on your heat tolerance)
1 cob of corn, cooked, niblets removed (or canned or frozen corn is fine)
1/4 cup feta cheese, crumbled
1 can black beans, drained and rinsed
~1 Tbsp Avocado oil (or olive oil)
~1 Tbsp red wine vinegar (or balsamic if you like a more bold flavour)
Instructions:
– Cook 2/3 cup of the wild rice blend according to package directions. Include 1/2 Tbsp coconut oil in the pot or rice cooker, and season it to your liking (I used garlic pepper and salt). Once cooked, place on a plate or shallow dish and let cool in the fridge (or prep the day before so it’s already cold).
– Finely chop the red onion and jalepeno and coarsely chop the bell pepper.
– Place the onion, peppers, beans, corn, cheese and cold rice in a large bowl. Season with freshly ground pepper (don’t add salt – the feta is salty enough!) and drizzle with oil and vinegar to your desired flavour. Mix together, garnish with fresh parsley if you have it, and serve!
