Mmmmmm…. Pour yourself a big glass of cold milk to go with these babies! I was pretty excited to find a relatively healthy dessert that tastes awesome. I’m pretty confident you could feed these bars to your husband and kids and they wouldn’t even guess that they’re full of red lentils! There’s no flour, no sugar, no oil… pretty awesome! However, with the oat flour, they are dense and chewy (hence the need for milk!). This was the one thing Jason didn’t really like about them. I thought they were great!
Peanut Butter Oatmeal Red Lentil Blondies

Ingredients
1/2 cup red lentils
1/2 cup all-natural creamy or crunchy peanut butter
1/3 cup pure maple syrup
1 tablespoon pure vanilla extract
1 cup rolled oats
1/2 teaspoon baking soda
1/4 teaspoon sea salt
1/3 cup chocolate chips, plus 2 tablespoons for sprinkling on top
Instructions
Preheat oven to 350F. Spray a 9×9 inch baking pan with nonstick cooking spray.
Place the oats in a blender or food processor and process until finely ground and smooth like flour. It won’t be perfectly smooth, but grind it for a couple minutes. Transfer to a small bowl and whisk in the baking soda and salt. Set aside.
In a small pot, combine red lentils and 1 cup of water; bring to a boil. Reduce heat, cover, and simmer for 10-15 minutes or until lentils are soft. Transfer lentils to the blender food processor, add a few tablespoons of water, and process until the lentils are a smooth puree. Set aside.
In a large bowl, mix together the peanut butter, maple syrup, and vanilla until smooth. Add the lentil puree and mix until well combined. Fold in the oat flour mixture, then gently fold in 1/3 cup of chocolate chips.
Pour the batter into the prepared baking pan and sprinkle the remaining chocolate chips over the top. Bake for 20-25 minutes. Keep the timing around 20 minutes for soft and chewy brownies. Cool the brownies completely on wire rack then cut into 16 squares.
