I have a tough time with store-bought salad dressings. I’ve tried cheap ones and expensive ones and most of them make me shudder! It sucks when you spend $10 on a bottle and you don’t like it; being ‘organic’ doesn’t mean it’s going to be good! So, in my effort to eat cleaner I figured I’d try to make my own. This one actually turned out totally awesome. It’s got sweetness and zip and a hint of cumin that adds a unique flavour. If you’re in the mood for a vinaigrette I’d recommend this. I think it will be a regular in my fridge!
¼ cup unsweetened applesauce
1 teaspoon mild miso
¼ teaspoon ground cumin
⅛ teaspoon ground cinnamon
2 tablespoons apple cider vinegar
1 tablespoon balsamic vinegar
¾−1 teaspoon Dijon mustard
1 tablespoon pure maple syrup
¼ rounded teaspoon sea salt (or more)
Freshly ground black pepper
Throw it all in a blender or Magic Bullet and mix it until smooth. Store in the fridge.
See the recipe at Forks Over Knives here!
Note: I had to purchase miso as I’d never used it before. I was looking for a plastic container in the Asian food section, but it was actually sold in a plastic bag. I should have taken a photo but didn’t even think of it. I’ve emptied the miso from the plastic bag and put it into a mason jar in the fridge. There is so much of the stuff I’m sure it will go bad before I use it all!
