This is an easy yet tasty side dish that works well along a steak and potato. You can go all out fresh, using fresh roasted corn on the cob and you can fry your own bacon, or you can take it easy and use canned or frozen corn and pre-cooked bacon or real bacon bits (please don’t use simulated bacon bits!).
Ingredients:
3 tbsp Italian dressing (or similar)
1/2 cup chopped red onion (or sweet)
1 cup chopped zucchini
6 cherry tomatoes
1 cup corn kernels (canned or frozen)
1/2 cup chopped yellow, orange or red bell pepper
2-3 tbsp chopped cooked bacon
1/2 cup shredded cheddar or marble cheese
1/2 cup sour cream
1 tbsp chopped fresh basil
Instructions:
Saute the onion for a couple minutes in the Italian dressing. Add the zucchini and tomatoes and cook until softened. Add the corn and bell pepper, lowering the heat. Add the bacon and just before serving mix in the cheese, sour cream and basil. Serve warm.
