The Joy of Holidays – Making Fruit Cakes
By: Janelle Hancock
The holidays bring folks together, and in my life, that always means folks are going to eat, drink, be merry and celebrate whatever traditions come to mind! For the past four years, I have tried different recipes for fruit cakes until I found the best recipe ever last year on www.JoyofBaking.com. While my grandma (otherwise known as nan to her grandkids) made literally the best fruit cakes ever; in her absence, this recipe is one of the best I have ever had. Ms. Joy of Baking, Stephanie Jaworski, says this recipe is pretty much Nigel Slaters, which I get, because he is awesome. Pretty much anything British is awesome.
If you have: patience, a wee bit of baking skill, time, some spare change (I definitely recommend picking up the dried fruit and nuts either in bulk, or if you decide to make many fruit cakes, at Costco), a love of all things fruit cake, and of course, a desire to make something that will absolutely be requested every single Christmas by every single person you know who eats fruit cake – make this. Make this now!
You must definitely enjoy a slice of this fruit cake with coffee or tea on a cold winters morning. After all, you are the baker and you deserve a treat! I recommend letting the cake mature a few weeks to soak up whatever alcohol you fancy before cracking into this baby. If you can afford the good stuff, do it.

Happy Holidays and to you and yours, a fruitful new year 🙂
