I’d previously made a peanut version of these treats and this time around figured I should add some chocolate to make it even that much better!
I created this recipe based on others out there – a hybrid of sorts. I made a big batch and stored them in the freezer in ziploc containers. They’re easy to pull out of the freezer when I’m craving something sweet (which is often). They’re a (relatively) clean and nutritional snack!
Chocolate & Nut Quinoa Bites

Makes 20 cookies
Ingredients
2 cups puffed quinoa
2 Tbsp ground flax
1/2 cup slivered/hand chopped almonds
2 Tbsp coconut oil
2/3 cup natural peanut butter
1/8 cup honey
1/2 cup chocolate chips
Instructions
In a large bowl, combine the puffed quinoa, flax and almonds.
Combine coconut oil, peanut butter, honey, and chocolate chips in a medium pot. Heat over med/low heat for about 5 minutes stirring constantly until well blended.
Take the peanut butter mixture off the heat and add to the quinoa mixture. Lightly stir until it is well blended, without squishing the puffed quinoa.
If the mixture is still warm, place the bowl in the fridge to cool down – it makes it easier to form cookies. Line a cookie sheet with parchment or waxed paper. Using a spoon, scoop a cookie sized dollop into your palm and use the spoon to help form it. Place the cookies close together on the cookie sheet.
Place the cookie sheet in the fridge until they are set (about an hour). If you’re in a hurry you can put them in the freezer for much less time. Once they’re set you can put them in a container and store them in the fridge or freezer.
