I have to admit – this is one of my all-time favorite dishes to make and to eat. It’s so easy and so flavourful, and we get lots of leftovers that freeze well.
This time around was probably my best version ever, and I’ve been making this for years (so perhaps I’m still learning!)…
I’m not going to say this is a ‘recipe’, but rather an idea or inspiration for you to experiment with. That’s the great thing about this dish – you get to season it and taste it as you go, and you can change the flavour based on the seasonings, sauces, and additions you include. This was the first time I’ve thrown corn into the dish and Jason and I thought it was awesome. The corn added some variation in texture and a hint of sweetness. Yum!
Ingredients:
3 x 8 inch soft tortillas
About 1.5 lbs lean ground beef
1 can refried beans (I like the kind with chilis for this dish)
About 2.5 cups of salsa
About 1/2 cup corn
Jalapenos (pickled, fresh, or other hot peppers)
Lotsa shredded cheese! (about 2 cups)
Directions:
Preheat the oven to 375F. Find an oven proof dish large enough to hold the tortillas and spray with PAM. Spread a light layer of salsa (about 1 cup) on the dish and place a tortilla on it.
Fry the ground beef, drain if required. Add the refried beans, cook until soft & well blended with the meat. Add the corn and jalapenos and mix together. Add about 1/2 cup of salsa for some extra flavour.
Portion half of the beef & bean mixture onto the first tortilla and spread it to the edges. Sprinkle a small amount of cheese on the mixture before placing another tortilla on top. Finish spreading the rest of the beef & bean mixture to the edge of the 2nd tortilla. Sprinkle a small amount of cheese on the mixture and place another tortilla on top. Spread a thick layer of salsa (about 1 cup) on top of the last tortilla so that the tortilla won’t dry out when it’s baked. Sprinkle (even more!) cheese on the top.
Bake about 20 mins or until the cheese is melted and the dish looks and smells delish!
Serve with:
Sour cream (for sure!)
Guacamole, salsa, hot sauce, cilantro… whatever!
