I had a bag of Salad Crunchy from Going Nuts – a booth at the local Calgary farmers markets. I had intended to give it to my parents for Christmas but I forgot! It’s not something I’d use on salads myself, so I found a way to creatively use it in a way I’d enjoy it. I looked online for no-bake energy bar recipes for ideas and pulled something together based on other recipes.
My only issue with my recipe as is, is that it’s a little too soft when out of the fridge – it won’t hold a bar shape. If anyone knows how to keep these bars more ‘together’ please comment – I’d love some input! Perhaps more peanut butter? More oatmeal?
The Salad Crunchy mix included: sunflower seeds, pumpkin seeds, soybeans, cranberries, sesame seeds.
Ingredients:
Salad Crunchy Mix – full bag
1/4 cup honey
1 teaspoon vanilla
pinch of salt
1/2 cup rolled oats
Microwave the honey and peanut butter until soft and mix well. Add all the other ingredients to the bowl and stir together. Spray an 8×8 pan with Pam and press the nut mix into the dish. Refrigerate and then cut into bite size (or two bite size) pieces, and individually wrap for easy snacks on the go. Store in the fridge or freezer.
