I received a very large bottle of Bailey’s and a bundt cake pan for Christmas, so this was a perfect recipe for me! I’d never made a bundt cake before, and I’m still figuring out my new oven, so I’m not sure it turned out as it should have. However, it tasted good, so that’s mostly what matters!
My pantry provided me with a jar of Butterscotch Rum sauce that I used instead of a caramel sauce. And, because I got lazy, I didn’t melt the chocolate for the top even though I had bought cream to do it. It would have looked so much nicer and tasted so much more decadent had I poured melted chocolate on it as the recipe indicates… I’ll continue to work on my presentation! LOL
I actually wasn’t a fan of the Butterscotch Rum sauce because the rum flavour overpowered the irish cream in the cake. So, I do plan to make this again, but will follow the directions for the sauces on top 🙂
