Because anything with toffee in it is good, right?
I pulled this recipe from my May 2013 Food Network magazine – Yes – I LOVE this magazine… Is it sad that I only subscribe to magazines that are at least half full of recipes?!
In making this recipe I also remember why I enjoy cooking more than baking… I don’t follow recipes well! The recipe says to use a medium pot – well, I used a small one so I had to transfer the butter/brown sugar to the large non-stick pan I used to toast the nuts. Quite logically, the recipe also says to wait until the mixture is cool to add the eggs… I didn’t. I cooked a bit of the first egg in the pan… Sigh… Note to self – follow the recipe when baking! LOL…
In the end, it all turned out well – tastes awesome and the middle is moist and chewy like I expected. The top isn’t as shiny as I’d expect (I expected it to look similar to brownies), but that could be because I didn’t really measure the butter either… I just used what was left in my butter dish, thinking it looked like 3/4 cup (12 Tablespoons)… Awesome, Tanya – way to start off the recipe on the right foot!
