I liked the idea of this so thought we should give it a shot on the 1st day of the year! Yummm… unhealthy eats 🙂

A few points: 1) The recipe called for 1.5 lbs of steak. I accidentally purchased 1kg (2.2 lbs) for $20… (flank steak is not cheap)! Next time, I should use the weight converter on my phone, and not think I’m converting anything successfully in my head. At least we have leftover meat for a breakfast hash! 2) The store was out of avocados so I used pre-made guacamole… don’t hate me! 3) I’d never cooked flank steak before. It really held it’s form, even in the crockpot. It sliced really well. 4) This recipe was ‘just ok’… Jay would have preferred the meat and the fillings be served in small soft taco shells versus on nachos. I think it would also be great on rice served with salsa. The meat needed more of a ‘Mexican’ flavour, or a sauce of sorts.
I’ll keep this recipe in my binder, but would definitely switch up how the meat is served.
