I was craving some kind of seafood. I picked up a package of live mussels from Sobeys for $8.99 and took a crack at a new recipe. It called for bacon, so it couldn’t be that bad, eh? I followed the directions (as best as I can LOL), but kept the bacon grease to lubricate the pasta once it was cooked (because it had to sit, waiting for the sauce and I didn’t want it to clump). I also kept a cup of the pasta water before draining. After the mussels were cooked, I took them out of the pot with a slotted spoon (putting them in a dish with a lid to stay warm) and used the juice from the pot to make a sauce for the pasta. I added some cream to the juice, and I whisked some flour into the pasta water then added it to the sauce and let it boil to thicken up a bit. I plated the pasta, poured the sauce on it, added the mussels, then sprinkled some chopped parsley and grana padano cheese.
Note: we thought the dish could use more garlic and oddly – salt. I will make it again, with the additional garlic!
Of course, we ate it with more Chardonnay! Mmmmm….
