We were invited to my boyfriends’ sisters’ house for Christmas dinner. I brought scalloped potatoes to contribute to the dinner. OMG – I LOVE this recipe! There’s nothing better than an ooey, gooey, pot of cheese sauce with bacon in it to drench thinly sliced potatoes in! Attached are a couple photos, but I forgot to take a photo once it came out of the oven… We quickly wrapped the dish in aluminum foil and a large towel to keep it warm, so I had other things on my mind. I got so many compliments on this recipe, I thought it’d be a great first recipe to share!
I did add quite a bit of seasoning to the dish because there’s nothing worse, in my mind, than bland scalloped potatoes. Costco carries a huge container of Johnny’s Garlic Spread seasoning. I added it to the sauce, and also to the middle of the potatoes.
I like this recipe because you pre-boil the potatoes just slightly. It gets rid of some of the starch in the potatoes and ensures the potatoes are already partly cooked. I use a mandolin to thinly slice the potatoes so they’re all the same size and to save my sanity – it’s very quick and easy (I’ll have to do another blog on our experience with mandolins). I made such a huge amount that I had to pre-boil the potatoes in 2 batches. The first batch I put into the dish and seasoned that layer with Johnny’s and spread some cheese sauce (with bacon) on top before I put the second batch of potatoes on as a top layer (I wanted some bacon midway through the dish). I suppose the dish would be even more delish with cheddar cheese melted on top! Mmmmm….
