I think could probably get rid of all my other vegetarian cookbooks and be quite happy with this one. Seriously – it tells you how to do things and why you’re doing them. They test recipes multiple times over, with different techniques, and tell you why they chose to do it a certain way. It’s informative, educational, and damn good! Every recipe I’ve tried has been great! I’ve recommended the cookbook to a couple friends now, and both have purchased it. Even if you’re not vegetarian, there are so many recipes in this cookbook that you can use every day.
I’ve made the Summer Vegetable Gratin dish twice now. OMG. I served it to guests the first time (good thing it worked out!) and made it again for myself later. Since it’s just me, I froze some of it and took it to work for lunches in individual serving containers. It was still delicious as re-heated leftovers! Of course, due to legal restrictions, I can’t share the recipe with you… but here’s the gist of the recipe (yes, there is a fair amount of prep work, including letting the tomatoes dry out a bit, slicing all the veggies, sautéing the onions, and grating the cheese… but no one said eating healthy was quick!). It’s a great recipe when zucchini/summer squash is cheap. It’s primarily tomatoes, zucchini/summer squash, onions and cheese – seasoned really well. The recipe is really simple – it just takes time.
